My new obsession has become the beautiful carrots that you can find in the cute little bushels at your grocery store or at farmers markets. They are always so sweet and flavorful no matter how you cook them. When I see them I always buy them, I am pretty sure that I am making up for all those times that I didn’t eat them as a kid- I can hear my mom saying it now “Shari eat your carrots they are good for your eyes.” This recipe is so easy and so delicious, and although glazed kind of negates the nutritional value I still feel pretty good about eating them.
A bushel of carrots- cleaned and chopped
1.5 tablespoons of butter
1 tablespoons of honey
Salt and pepper to taste
Heat a medium sauce pan add your butter and let it melt
Toss in your carrots and let them soften about 6 minutes
Drizzle the honey and cook for 6 more minutes moving them around frequently
Season with salt and pepper to taste
Serve them up and enjoy!
